LEFTOVER CANDY COOKIE BARS

Happy October everyone, I love this month… it really kicks off the fall season!  Something you may not know about me, sometimes I can predict the future, and I predict in about a month’s time you’ll be overloaded with candy.  I know, my psychic abilities are really good… what can I say, it’s a gift.  But seriously, whether you have kids who go trick or treating or you just buy candy for the neighborhood kids there is a huge chance you’ll soon be overloaded with candy.

Sometimes you just get really bored and overwhelmed with leftover candy I know, so over the years I’ve found this fun way to use up any leftovers.   I’ve been doing this ever since my kids were little and they’ve always loved it.  It has such a unique taste compared to my regular chocolate chip cookie bars.  By the way I’m totally team cookie bar… I have zero patience for perfectly scooping out dough for cookies.

And it’s great for all leftover candy not just Halloween.  I’ve done this with leftover Christmas, Valentines, and school end of the year party candy.   It’s really fun finding leftovers and chopping them up.  You can use any combination you like, although I’ve only experimented with chocolate based candy, and I always encourage a few M&M’s for some fun color.

We start with the perfect chocolate chip cookie dough base, and then fold in our chopped up candy.  Kids will love this recipe, mine have loved it since they were little and being teenagers they still get a kick out of it.   You will have no problem getting helpers in the kitchen.

I use this 9×13 metal pan, but any will do, just be sure to use a metal one for the best results.  Another trick I learned is to line the pan with foil, then once cooled pull the foil up to gently lift out the cookie bars.  Then simply slice, it’s so easy!

Leftover Candy Cookie Bars

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 sticks butter, softned
  • 2 cups packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups chopped up leftover candy

Instructions

  • Preheat oven to 350°
  • In a medium bowl mix flour, baking powder, baking soda, and salt together until blended.  
  • In a large bowl cream butter, add brown sugar gradually, and cream until fluffy with a mixer.  
  • Add eggs and vanilla, mix well.  Blend in dry ingredients with mixer, then fold in chopped candy.  
  • Scoop the mixture into a greased 9×13 inch pan and with wet or lightly greased hands press the mixture evenly into the pan.  
  • Bake for 25-30 minutes.  Cool and cut into squares.

If you try any fun and unusual candy combinations let me know!  Like I said, I’ve always stayed with chocolate based options, but why not get creative?  I may definitely throw some candy corns into the next batch.

By the way these cookie bars freeze perfectly, so when you need a sugar break throw them in the freezer for one of those bad craving days.  Enjoy!

SIMPLE FALL FRONT PORCH DECOR

Happy fall everyone!  We have been busy the last few weeks getting the front of our house in tip top shape again.  When we came home from Europe things were not good!  6 weeks of neglect along with record breaking heat temperatures took a toll on the front of our house, but I’m happy to say we’ve got things back in order and ready for fall.

I have been wanting to take photos outside for DAYS now… it has rained non-stop.  So the forecast said only a 10% percent chance of rain Thursday – my planned photo taking day and again it poured nearly all day.  It stopped for an hour, and once everything looked dry I ran out to get photos – haha, and we got them!

Normally in the spring and summer I keep the planters by our front door full with pretty plants and flowers, but it’s also nice having a break from that in the fall and winter.  I couldn’t resist these Jack-o-Lanterns from Pier 1… aren’t they just so cute?  All I did was sit it in the urn, then I wrapped some twig garland around it, which you can find on Amazon or usually any craft store, and then I added some leaf garland from the Dollar Tree.  Love these little pumpkin faces!

I used leftover grapevine for our wall planter, seriously a roll of twig garland is the best thing to give your fall decorations a custom look!

One thing that always bothered us about our house was the small front porch, where the bench is used to be a huge row of ugly boxy shrubs.  One day we got the idea to rip out the shrubs and use the area as a porch.  In this old blog post I showed the before photos, it’s been a great DIY improvement project.

I tell everyone I have a love hate relationship with the decomposed granite though.  I love the way it looks, but surprisingly it takes a lot of maintenance.  After the summer it was full of weeds so just a few days ago I dug it out by hand and added new granite.  It looks awesome again… I’m thinking I’ll need to do it again come spring.  Seriously it’s high maintenance!!

Every room can use a touch of leopard right?  And my front porch is no exception.  I just need my leopard fix – haha.  Look at this bumpy green pumpkin… isn’t it just so cool to look at?  If the neighborhood kids smash my bumpy green pumpkin this Mama is going to be MAD y’all!

Loving the wreath too, wreaths out of berries just seem to be my favorite.  Adjustable wreath hooks are such an amazing invention, it seems like with the standard wreath hooks it would look way too high.  I had a clear plastic adjustable one for ever but finally splurged when this hammered gold one went on sale.  Cute!!  It’s the little stuff that always makes me so happy.

Our front porch is a bit tricky to photograph, just weird angles and lots of things to work around, but we did pretty good.  The rain has stopped and the air is now cooler and crisp – the last few days have actually felt like fall, that’s saying a lot living in Texas!

Our front porch decor is definitely on the simple side but I really like it.  If you’re looking for some quick outdoor decorations it’s all about pumpkins!  Put them everywhere, in pots, on the porch in the flower beds, really they look adorable anywhere.   Don’t forget to get creative with a little cheap garland and you’re good to go!

I’m putting the last few fall touches around our home so I should get those up really soon.  Wishing everyone a great weekend and we’ll talk soon.

A DAY TRIP TO WINDSOR CASTLE

I’m back with another Europe post, I actually have a few more left that I want to write.  I needed a little mini break, but now I’m ready to share Windsor Castle with you!  You might say we we’re fans of Harry and Meghan, we all got up at 5 am to watch the wedding and had a breakfast party!  So yeah… when we were in England we just had to go visit.

The town of Windsor is an easy train ride from London and makes for a perfect day trip.  We spent the entire day on foot, it’s really easy to navigate.  The first thing we did was stop for lunch at Thames View Restaurant and Bar inside the Sir Christopher Wren Hotel.  It had a gorgeous river view and we enjoyed watching the boats and swans as we ate.  After lunch we took a short walk up the hill to the castle.

One thing I didn’t get unfortunately is any interior photos of the castle.  It’s not allowed, and they really watch for that too.  The Queen says no to interior photos and that is that.  That also includes St. George Chapel and certain areas outside on top of the Round Tower.  However we were allowed to take plenty of exterior photos, and also took many in the beautiful town of Windsor.

Walking inside St. George Chapel was certainly an amazing experience!  The architecture is just so stunning that I can’t get over it.

Tickets to the top of the Round Tower were extra but worth it.  It’s a lot of stairs to the top but the views are amazing.  I was excited when our guide told us on the way up that he was the man in the red coat checking the invitations at Harry and Meghan’s wedding.  I found this very exciting, because honestly I found him familiar looking but had no idea why.  He said there were a few celebrity meltdowns and diva moments because a few guests forgot their invitations… he refused to say who though.  Hmm…

So, unseen is the left side of the tower.  It overlooks the Queen’s rooms so photos are simply not allowed, she did have some pretty curtains though.  Straight off the tower was the long road that Harry and Meghan took a carriage ride after the ceremony and the rest had really nice city views, you could even see planes descending into Heathrow.

Of course being summer in Europe and after the Royal Wedding it was crowded, that was the only negative.  There are little shops inside the castle grounds and places to stop and get a snack or some ice cream.  Sadly the Queen was not in the castle that day, if she is they fly a special flag.  Not that we would have gotten to see her, it just would of been a cool feeling to know she was there, I think she was in Scotland during the time.  Then when we went to Scotland she had just gone back to England, haha… how’s that for luck?

After touring the castle we walked around the quaint little town of Windsor, it’s just oozing with charm.  Here are some of our photos.

After some shopping and a bit more exploring we ended up having dinner at the Mango Lounge.  The food was wonderful, if I was the Queen I would be ordering take-out from there every week!  It was a long day trip and we were really tired at the end of the day but it was certainly worth it.

I loved Windsor even more than I thought I would.  Next time we visit England Brian and I want to stay several days in Windsor, there are lots of hotels and it’s simply gorgeous.  Until next time.

NYC & MEAN GIRLS ON BROADWAY

There’s something about traveling with family… it’s just so fun, not to mention a total bonding experience.  So any time there is a chance to put a trip together I always jump on the idea.  This trip just spontaneously happened back in the spring, back when our Europe trip was still being planned.  It all started with the Mean Girls movie.  I mean what is it about that movie we love so much?  It’s not just us, it has a HUGE following.  It’s just so funny, so over the top absurd, but also REALISTIC.  I think most of us have a Regina George in our life, or at least knew one growing up in school right?  So what do you do when a movie you love goes to Broadway?  Cha-Ching… you buy tickets ASAP of course!

I’m kicking myself for not taking more photos.  I mean yeah we brought our big camera, I was just too busy having fun to unpack it.  Plus Brian didn’t want to lug the thing around, I get it. The few iPhone pics we did take turned out really good though!

It was a short trip, but the first thing we did was tour NBC Studios.  Wow… that was the coolest thing ever.  We couldn’t take photos but to be able to tour Seth Meyers, Jimmy Fallon, and best of all the Saturday Night Live studio was AMAZING.   The SNL studio is so much smaller, but learning where they set up the skits and hearing stories was so incredible!!

When watching Mean Girls you can never have on enough pink it seems.  Oh… did I mention the husbands were there?  They came along with us in great spirits to the musical… how awesome are they?

I did manage to get a few flash free snaps during the show.  Not sure if that was allowed… it’s amazing how easy it is to forget rules after some wine.

It’s so funny Brian and I are like ugh… let’s not go to Times Square this year, been there done that.  Yet like moths to a flame if we’re anywhere near it we end up there.  I mean how can you not?  There’s just so much energy there, I mean it’s New York!

One thing I always love to do is frame our playbills from the shows I see, and these frames from Amazon are made just the right size.  Haha… like my coffee mug below?  Nothing like a genuine compliment eh?

In between the NBC tour, and Broadway, my Sister and I did some serious shopping at Bloomingdales, no corner was left undiscovered!  The guys went off for a little guy shopping of their own.. I think there was some whiskey involved – haha.

We did eat at 2 amazing restaurants which are unseen… remember I forgot to take photos.  We’ll blame the wine!  One was Gato, an amazing Bobby Flay restaurant, he had his famous scrambled eggs on the menu.  My Brother in Law gave me a bite and wow!!  Those $17 scrambled eggs were worth it, it was magical!  Also Gallagher’s Steakhouse, it was seriously some amazing steak and so close to our theater.

We stayed at the Park Lane Hotel, which is far from the Broadway district but when it comes to Central Park and shopping it was a great location.

NYC is one of our favorite big city destinations, every trip is always a pleasure.  Mean Girls fans you need to see the musical on Broadway!

I CAN’T HAVE AN AFFAIR BECAUSE IT’S WRONG & I DON’T WANT EARL TO KILL ME PIE

Any Waitress fans out there?  Or anyone just obsessed with pie?  Maybe your thinking of having an affair, you did a quick google search to see if it was a good idea and somehow you ended up confused at my blog.  Regardless, the I Can’t Have an Affair Because It’s Wrong and I Don’t Want Earl to Kill Me Pie is delicious.  It’s a rich marbled chocolate cheesecake on a cookie crumb crust.  It’s a swirl of emotions between right and wrong, much how Jenna felt in the movie.

There’s a saying that pie fixes everything, and I happen to agree.  I’ve always had a fascination with pie, truthfully I love it more than cake. Pie has so much character, just looking at one you can see the love and labor that goes into one.

I still remember very vividly the day I saw the movie Waitress at the movie theatre.  My girls went to a twice a week mothers’ day out at a nearby church and it was pouring rain outside.  I had nothing to do and I thought why don’t I go to the movies by myself?  I’d never done it before and the thought of sneaking off alone to a movie really appealed to me, it seemed naughty for a Mom of 3 to do mid-day.  I had no idea what Waitress was about, it was the only movie listed I had time to see, so I went for it.

That day I fell in love with the story, the colors, the pies…. everything.  I remember leaving the theater feeling so warm and fuzzy.  To this day when I’m feeling kinda down it’s my go to movie to watch.  Watching the Waitress musical on Broadway was another iconic moment in my life a few years ago.  It was an incredible experience my husband surprised me with on my birthday and I was thrilled to see The Waitress Pie Book for sale.

If you read my blog regularly you know my daughter Haley and I share the same birthday and over the years she has grown to love this movie just as much as I do.  She was thrilled when I brought home the pie book and she’s determined that we make every one in the book! At her request this year instead of cake we made a pie, and out of the entire book she picked this swirled marble cheesecake deliciousness.  I think she made a good choice!

I’ve listed the recipe below, be sure to check out my tips at the very bottom.  This pie does have a lot of steps, but don’t let that overwhelm you, it’s not a hard pie to make.

I Can't Have an Affair Because It's Wrong & I Don't Want Earl to Kill Me Pie

Ingredients

Chocolate cookie crumb pie shell:

  • 1 3/4 cups chocolate wafer cookie crumbs (*see my tips below)
  • 6 tbs (3/4 stick) unsalted butter, melted

Cheesecake filling:

  • 4 oz bittersweet chocolate, chopped
  • 3/4 cup heavy cream (divided)
  • 4 oz white chocolate, chopped
  • 12 oz cream cheese, at room temperature
  • 1/3 cup sweetened condensed milk
  • 1 1/2 tsp vanilla extract

Instructions

Instructions for the pie shell:

  • Preheat the oven to 350°  
  • Toss together crumbs and butter in a medium sized bowl to moisten.  Press the mixture onto the bottom and up the sides of a 9 1/2-inch deep pie pan.  
  • Refrigerate at least 15 minutes to firm up the butter.  
  • Bake in the oven for about 10 minutes, or until set.  Cool on a wire rack to room temperature.

Instructions for the filling:

  • Place the chopped chocolate in a medium heatproof bowl.  Warm 1/4 cup of cream into a saucepan over medium heat until small bubbles form around the edge.  Pour over the chocolate and let stand for 1 minute to soften, then whisk until smooth.
  • Melt the white chocolate in a large glass bowl in the microwave at 50 percent power in 20-second increments (*see my tips below) until the pieces begin to lose their shape, and then stir until smooth.  Cool to room temperature.
  • Add remaining 1/2 cup of cream, cream cheese, sweetened condensed milk, and vanilla to the white chocolate bowl.  Beat with a mixer on high speed until smooth.  Pour into the pie shell.
  • Pour the chocolate mixture over the cream cheese and then swirl slowly with the end of a spoon to marble the filling.  Refrigerate 4 hours, or until firm.

*LAURA’S TIPS:

To quickly bring cream cheese to room temperature, dice up into small pieces on a cutting board.  It will soften very quickly.

For the pie crust you need to use round cookie wafers, not the crispy stick type.  If you can’t find any use oreos and scrape out the frosting like I did.  I processed my cookies in the food processor for a nice smooth texture, I did this in 2 separate batches.

For best results use a high quality chocolates, I used a Bakers chocolate bar from the baking aisle and chopped by hand on a cutting board.

I wrote the melting instructions as written but I did need to microwave the white chocolate a lot longer.  I ended up using full power but I kept a very close eye on it.  Be careful because microwaves vary in power and you can’t recover burnt chocolate.

I like to use my own homemade vanilla extract, good vanilla is everything when it comes to baking!  It’s actually simple to make and you can read my instructions Make Your Own Vanilla Extract blog post.  It’s an old post and the photos aren’t very pretty but it’s great vanilla extract!

The texture and flavors of this pie were amazing.  We also liked how it wasn’t overly sweet either, it was just right.   Hardcore movie fans will know this recipe is different from the actual movie.  Whatever… just don’t have an affair on your husband.  And can we all agree how much we hate Earl?  Even if he does have really good hair.

THE EMOTIONS OF HAVING A 9/11 BIRTHDAY

Happiness, sadness, anger, and guilt are the 4 words I would use to describe my birthday, let me repeat that last word again though, GUILT.  When it comes to having a 9/11 birthday I have a lot of guilt, and it weighs on me like a ton of bricks.

September is generally a very happy month for me, I love life and I’m blessed to be alive and well, but I have not been okay this last week. So here I am 17 years later, still emotional, still feeling guilty, still peeling back the layers of emotion and trying to process them.  Last year hit me hard, this year has been even worse.  It has been 17 years and I DO NOT HAVE CLOSURE.

Growing up I always loved my birthday, it was the one day that was mine, it was just about celebrating me and my birth, it was that one special day all to myself.  I could be loved, spoiled, and happy.  Then on my 24th birthday it was taken away and suddenly it was a bad terrible day.  Every year I have pushed my emotions to the side for many reasons.

The last few days I’ve been depressed, I haven’t gone a single day without crying.  9/11 is never going to go away, people suffered and died… I’m not sure I’ll ever get over it completely, but I do need to find some way to heal.  I’ve been struggling so hard this week, Brian is trying to help me with my emotions.  He says I need to write this as part of the healing process, I actually don’t want to write this because it hurts too much, but I’m willing to do anything to heal my heart.  I’ve actually written this post a few times, I’ve even put it in the trash.  Today I’ve pulled it out of the trash, determined to write this, my eyes are full with tears, I’m struggling to breath… but I’m going to get through this.

Let’s first address why in 17 years I haven’t dealt with my feelings… my daughter Haley.  So you don’t get confused I’ll give you the speed version…  I had my first, a son, Corey when I was 17 years old, and married Brian a month before I turned 22.  Haley is my middle child and I had plans for a 3rd child in the future, but Ashley was a happy early surprise.  I’ve been blessed with 2 surprise babies, but I struggled for well over a year to get pregnant with Haley.  I prayed for her a lot,  I would close my eyes and I could almost see her face, she was a happy little girl with curly hair and blue eyes like mine, and then it happened.  I became pregnant and I was ecstatic later to find out she was a girl.

Haley was due October 4th, but late in the evening on September 10th my back started hurting, and then sure enough a bit after midnight contractions started and we went to the hospital.  The doctor said I was far enough into my pregnancy that he wouldn’t stop labor, and my son was born around 36 weeks too and he was just fine.  I still remember the nurse putting the hospital ID bracelet around my wrist and verifying my information, “Laura Salter” she said, “9/11…. well Happy Birthday.. and a baby on your birthday too!”  I was so excited, it was my day, and I was having my baby girl, and it would be her day too, we would share it forever.

Then it happened.  I was in the final stages of labor and everything was a blur.  I knew something bad had happened.  Family was distracted, doctors and nurses were distracted, I was in pain, I was confused, what was happening.  The news was on while I was in labor, finally in the last few minutes the doctor said let’s turn this off.  At nearly the exact minute flight 93 crashed into the ground Haley was born.   Suddenly I didn’t care about what was happening on TV.  The day was just about me and my daughter.

I had walked into the hospital at 23 years old and left at 24 with a newborn baby and a national tragedy on my birthday.   Suddenly my special day and my baby’s was full of suffering and death.  It was an evil day, I read articles, I watched the news… but I had to shut it out, it was too hard to process.  I wanted to take my 2 kids, run away from it all and hide.

Of course over the years I was haunted by it, but my way of dealing with it was pushing it aside and not think too much about it.  It was just too sad.  The anniversary of 9/11 was everywhere, but it was Haley’s first birthday.  Having her was a wonderful distraction, on Haley’s 2nd birthday I was pregnant with Ashley.   I focused on my kids and life, when I did think about 9/11 I tried to instantly change the subject in my mind.  Not that I didn’t care, it was simply unbearable to think about.

I have never written something so painful as this post.  It is still raw, and it hurts me that this happened, it is a burden I carry.  I feel guilty for wanting to have my day back, I feel guilty for wishing my daughter had a normal birthday.  It’s not my fault, but I feel embarrassed and ashamed of my birthday.

I want to celebrate, am I allowed?  Yes, I am but then the guilt kicks in.  Am I judged when I celebrate on such a terrible day?  I still cringe when I hand over my drivers license and people see my date of birth, I’m embarrassed for anyone to tell the restaurant staff it’s my birthday.

I am ANGRY when my daughter is forced to watch videos of the World Trade Center burning and crashing down on her birthday at school.  I am SADDENED when every year a friend of hers sobs at school because her Dad died in the 9/11 attack.  I am physically SICK when I realize all who died and even sicker when I realize the people who knew death was about to come.

I must move on, heal and find closure, but it’s incredibly hard.  I will never forget for a second how cruel humans can be towards each other and I will never forget those who died, but I must give myself permission to feel happy on this day.  If Haley and I can’t enjoy our birthday and the simple gift of being alive then the terrorists have even more power.

As part of my healing and moving forward we’ve decided to volunteer or do random acts of kindness on 9/11 to honor those who died & the hero’s who tried to save.  Not just me, but my daughter and I need to find a way to honor those each year so we can celebrate without the burden.  This year we are bringing cupcakes to the firemen at the local fire station.  We can all do something wonderful today in honor of the victims, big or small and I encourage you to do so too.

Today I will put on my favorite outfit, smile, eat cake, and open presents.  I will allow myself and my daughter to be happy, but behind those smiles we know and we haven’t forgotten.

If there is one thing we can learn from 9/11 it’s to have love and tolerance for everyone.  Who cares about religion, politics, race, or sexual orientation.  We all share this planet together and that should be enough to bond us and overlook our differences.  The world would be so boring if we were all the same.

The first time I visited the National September 11th Memorial in New York it was under construction, but a couple of years ago we did visit over Christmas and we took the girls.   Haley was there and it was a lot to take in, it’s a hard day for all people not just Americans, and it’s a hard birthday.

Perhaps I feel even more vulnerable having just returned from New York last week, I thought about it then, but I couldn’t go to the memorial.  I wish I could have, but it was hurting me too much, with my emotions coming to term I would of been a hysterical mess.  I asked my sister who was also in New York to take the above photos of the memorial.  It really is beautiful.

I believe God gave me my daughter early to help ease my pain.  Trying to cope while pregnant, without her on my birthday would have been unbearable.  She was my comfort.

My baby girl Haley spent the first 14 months of her life pretty much bald, but when her hair did grow it was curly, just like I envisioned.

Happy 17th Birthday Haley, you were my best birthday gift ever.  I’m so proud of all your accomplishments and I know how hard you have worked to achieve your goals.  You are such a strong women and I know you’ll continue to do great things.  XOXO

This blog post was just written from my perspective, but I know a tremendous amount of people have suffered and been affected.  Many people died but focusing on all the beautiful souls that were born that day, like my daughter gives me some comfort.

3 DAYS IN BRUGES, BELGIUM

I’ve had lots of people ask me what our favorite part of our 6 week Europe vacation was.  It’s a hard question, all the countries were amazing in their own way, but I would say Bruges in Belgium won my heart.  It’s a close call with Italy though… it was amazing there too, but out of the countries and cities we visited Bruges left such a lasting impression on me.

I already knew when it came time to blog about our Bruges experience it would need to be split up into 2 blog posts because of the amazing experience.  I first wrote What To Eat And Drink In Bruges, so if you haven’t read that be sure too.  We ate so many amazing things!

The entire country of Belgium has 3 official languages, Dutch, French and German.  The language spoken most in Bruges is Flemish, which is very close to Dutch. Which brings me to the spelling and pronunciation of Bruges.  You will see the city spelled a few different ways too.  Bruges is the French spelling, but it’s spelled Brugges in Dutch.

It’s pretty funny how it’s pronounced so many different ways. There are so many different ways of pronunciation that I had a local explain it to me, but it’s still confusing.  The French way of pronouncing it is BROO-ZH, as in rhymes with rouge.

It seems the Flemish and Dutch pronunciation is the most difficult for me to grasp, the accents vary more, some being pronounced with a hard or soft G.  So I go with the French pronunciation – it makes the most sense to my brain.  Everyone seemed to know where I was talking about with the French pronunciation.

How would I describe Bruges?  Absolutely perfect, it’s like stepping into a charming fairytale world.   From the cobblestone streets to the delightful bridges and canals it was perfect.  Bruges is referred to the Venice of the north and it’s easy to see why walking along the romantic canals and bridges, it’s almost intoxicating.

Except for an afternoon city bus tour and a short boat ride we spent all of our time walking on foot, Bruges is a very easy town to walk.   We stayed at the ever so charming Hotel Lucca, which you can see below.  The owners were incredibly helpful and kind, and every morning we were greeted to the perfect complimentary breakfast.  I can’t recommend this place enough and it was a short walk to the Belfry tower.

Bruges is also known as the city of bells.   You can hear the sounds of the bells playing all around you, which makes this medieval town even more enchanting.  We slept with our windows open and I remember waking up to the sound of the bells playing Ava Maria, it was one of those moments you hope to remember forever.

One thing Bruges does not have a shortage of is beer, beer enthusiasts will love doing to the Bruges Beer Experience.  If you think you know everything about beer think again.  Here you can learn about beer with fun interactive exhibits and bonus, at the end of the tour you’ll find yourself in the tasting room – with stunning views of the city.

Taking a boat ride on the canal is a must, here our captain told us so much interesting information about the city, and you get gorgeous views that can only be seen by boat.  Maybe you’ll get lucky and see some swans swimming beside you too.  The boat rides only go in certain popular parts of the canal.  I like this because you can still walk other areas along the canal and it’s peaceful and quiet.

I love how the city has a lot of outdoor modern art, it adds a fun quirkiness, and the blue whale was certainly the craziest!  I love the contrast of old and modern though, it’s fun.

Another thing we had a blast doing was shopping the flea markets along the river.  You could easily spend hours browsing everything, wondering where they came from, and their story.  I found old family black and white photos, war memorabilia, china, and lots of gorgeous brass.  If I would have had an empty suitcase I could of packed it full of cool stuff.

Holland is known for its windmills, but you can find a few right here in Bruges just walking distance from the city center.  The City Tour Bus went right by this one, I highly recommend the bus tour by the way.  It’s about a 50 minute tour and you can see the highlights of the city.

Do you know what to shop for when your in Bruges?  Lace of course!  Belgium is known for a variety of things, beer, waffles, and chocolate – but don’t forget to check out some lace shops.  You want to look for handmade lace, which is pricier than other lace, but it has gorgeous detail.  Maybe you’ll even see a live demonstration of lace being made like we did.  Those looking for a great Christmas shop check out the Kathe Wohlfahrt shop.

Bruges was so dreamy I desperately want to visit again, and I’d love to explore more little towns in Belgium.  If you ever get the chance to visit Bruges do it.  You won’t regret it!

WHY YOU NEED TO DRINK CUCUMBER WATER

Chances are you’ve already heard of cucumber water, it’s been around a long time, maybe you’ve even tried it at a day spa.  Not just cucumber water, but all infused waters have exploded with popularity over the last several years.  Not only do they taste great but they’re an easy way to stay hydrated.  I must confess though, in the past I’ve never consistently made infused water even though I liked it, I looked at it as just another thing to prepare in the kitchen.

It was towards the end of our 6 week trip in Europe that I began feeling really sick and run down.  My sleep schedule was off, my diet was progressively getting worse, and I was having way too much caffeine and alcohol.  Not only did I feel sick, it was seriously affecting the quality of my skin too.  So during the last week of our trip I decided to find every way possible to improve my diet.  Shortly after returning home my diet was back to it’s usual healthy state, but I still wanted to give our normal healthy diet a makeover.

I’ve improved lots of things, but I’ve been the most impressed with cucumber water!  I’ve been drinking it daily for about 3 weeks now and I’ve honestly never felt better in my life!  It’s not just me either, I have Brian and the girls hooked on it as well.  So let’s talk about the numerous benefits of drinking cucumber water and I’ll explain my routine that makes it so easy!  Plus I’ve found a few fun topical uses for cucumber water as well!

HYDRATION

Let’s start with the most obvious, staying hydrated, our bodies will not function well without proper hydration.  People are recommended to drink 6-8 glasses of water a day, yet many of us don’t come close to reaching that goal.  The delicious fresh taste of cucumber water will easily aid in your water intake.

DETOX

Cucumbers, being a natural diuretic, are extremely helpful in flushing out toxins from the body.  They help deliver toxins through your urine and aid in cleansing the liver.

HELPS WITH WEIGHT LOSS

Toss sugary and artificially sweetened sodas to the curb.  They aren’t good for you and you really don’t need them.  Cucumber water makes an excellent drink replacement and helps you feel full.  It’s been discovered that when we get cravings to eat, it’s actually just our bodies telling us we need water.  Next time you’re hungry try a glass of cucumber water first.

VITAMINS & ANTIOXIDANTS

Cucumbers are rich with vitamins and antioxidants.  Vitamin K found in cucumber water boosts bone health, lowers chances of osteoporosis, and plays a strong role in decreasing chances of blood clots, potassium helps to lower blood pressure, and this great source of B vitamins will increase energy.  Antioxidants help prevent and delay cell damage, which can lower chronic conditions such as eye degeneration, heart disease, Alzheimer’s, and diabetes.  Cucumbers are a member of the cucurbitaceae family of plants and contain high levels of nutrients known as cucurbitacins which may help prevent cancer and stop some cancer cells from surviving.  One study from the Journal of Cancer found that it may slow the progression of prostate cancer.

ENHANCES SKIN

Staying hydrated is key for beautiful skin and seeing wrinkles fade away, but cucumber water can help even more.  Healthy skin-supporting vitamins such as vitamin C and minerals like magnesium and silica soothe the skin and give it a youthful glow.  The anti-inflammatories naturally present in cucumber water can help clear up any acne problems as well.

SO HOW DO YOU MAKE IT?

It’s so easy, just 2 simple ingredients – cucumbers and water!  Why did I think this would be hard? Just take a cucumber, slice it up and add water.  It is that simple – I do recommend organic when possible though.

You can absolutely use a knife and slice by hand, your slices don’t need to be perfect, but I prefer the ease of my mandolin – your choice.  Sometimes I use a regular glass pitcher, other times I use my special infused pitcher, and sometimes I’ll use both.

TIME AND RATIO

There is no magic formula, it’s basically about you and your tastes, but I can tell you my favorite method.  I slice half a cucumber to 2 quarts of water and refrigerate overnight.  It’s become a ritual, every few days I make 2 batches of water.  I simply slice the washed, unpeeled cucumbers late afternoon or early evening and refrigerate overnight.  I find half a cucumber gives me great taste the next morning.  If you don’t want to do the overnight method, that’s fine, I recommend at least 4 hours for the water to infuse.

HOW LONG WILL IT KEEP?

After infusing overnight, or shorter to taste, strain and remove the cucumbers.  This will increase the shelf life of the infused water.  You should keep any unused water in the refrigerator and use within 4 days.  When it comes time to removing cucumbers I just pour the infused water through a mesh strainer into a clean container, so easy.

MY CONTAINERS

I have a few different containers that I use to make my infused water.  The infusion pitcher on the left is specially made to infuse water, it has a special compartment that makes removing the cucumbers very easy, it just unscrews.  I also love my glass rectangle containers, that fit nicely in the refrigerator, and unseen is my individual infusion water bottle, it’s great for when you forget to make water on the go or traveling.

TOPICAL USES

You can use your cucumber water topically for benefits too.  Sometimes in the morning I’ll take chilled cucumber water and rinse my face, it  makes a great gentle morning cleanser.  Other times I’ll wet a washcloth with chilled cucumber water – gently squeeze any excess out – and apply to my face for 5 minutes for a soothing natural face mask.  Another favorite option is to keep a spray bottle like this in the refrigerator and mist my face when it needs freshening.  Remember to discard after 4 days and make a fresh batch.

I’ve experienmented with adding other flavors to cucumber water, but honestly I enjoy just the pure flavor of straight cucumber water.  I’m not a fan of lemon water, but I know many people are and they make a great addition as well as mint.  I say start with regular cucumber water, and then experiment from there if necessary.

INVERARAY CASTLE IN SCOTLAND

Visiting Inveraray Castle was like stepping into a fairy tale.  It was probably one of our favorite things while in Scotland and I’m so excited to share it with you today.  You might have remembered how I mentioned in a few older blog posts how Brian is related to the Campbell Clan in Scotland through his Grandmother and it was one of the reasons we decided to visit beautiful Scotland.  That and the fact that the Christmas episode of Downton Abbey was filmed at Inveraray Castle made us even more excited.  Anyone else obsessed with Downtown Abbey as much as us?  I think it’s time to restart Season One again!

We were only able to visit the pretty little town of Inveraray for the day.  While staying in Edinburgh we were able to get there by taking the train and then the bus.  The bus stop is actually not that far from the castle, probably a 10 minute walk.  Wow, was the weather ever crazy that day!  You can tell by the photos below, we had beautiful sunny skies, clouds, rain, warm weather, and hot weather.   It really is true what they say about weather in Scotland, it can change in a split second.

I must say Inveraray Castle is one of the prettiest castles I’ve ever seen in real life!

      

The inside of the castle is absolutely gorgeous with so much attention to detail.  I especially loved the dining room that was created in 1770 as times changed and fashion and entertaining became more popular.  The gold ships on the dining room table are such a unique touch!

Below you see the Campbell family blue tartan pattern on the canopy bed,  I can’t get over the gorgeous carvings on the bed, especially the barley twist, I’m obsessed with barley twist!  Brian also bought a kilt in the family pattern.  I’m excited for him to wear it, he says man skirts are really comfortable and breezy… too bad he can’t wear it during Texas summers.

Their entire castle is not open to the public, people still live there, but there were still plenty of rooms to explore and it’s absolutely still worth a visit!

 

At the ground level there are a few more areas to explore, such as the original kitchen, a gift shop and my favorite, the restaurant, where you can eat indoors or outdoors in the garden.

After exploring the inside of the castle we had a bit of lunch and then went out to explore the garden.  There were big windy trees and grassy trails with flowers and vines.  In the background of the castle you can see the mountains and hills of Scotland.

After spending several hours at the castle we went to explore the town of Inveraray.  The Inveraray Inn has a great spot to grab a drink or a bite, and there were many more charming places around the town.  Everything is easily within walking distance, and we especially enjoyed taking in the water views of the lake.

One thing we realized while on our European trip is how much we love exploring smaller towns.  Don’t get me wrong, big bustling European cities are pretty awesome, but we really do get the most satisfaction from visiting smaller, quieter towns.  We’ve decided the next time we stay in Scotland we’re going to just stay in Inveraray or around the Scottish Highlands, the beauty of this area is just unreal!

TIPS ON MAKING YOUR TRIP TO PARIS MORE ENJOYABLE

I am back with another travel post today, with one of my favorite places in the world, PARIS!  It’s just such a magical place, and even though we recently visited during the heat wave in the peak of travel season it was still amazing.  I’m incredibly grateful that our schedules allowed us to visit Paris again while vacationing in London, but having visited this gorgeous city now 4 times I’ve come up with some opinions and tips I think would be helpful for anyone planning a trip and I’m not holding back.  So here I go… tips to make your stay more enjoyable and stress free in Paris.

THE TOP OF THE EIFFEL TOWER IS OVERRATED

Let me start with the most shocking.  Somebody somewhere will read this and hate me, I apologize, but I also don’t care, I can’t be the only person who feels this way.  I love the Eiffel Tower more than anything, it’s magical, I could stay there all day –  that is from the ground.  Please keep me off that freaking thing, there are 3 levels to the Eiffel tower and I hate them all.  Chances are once at the top you’ll be crowded, uncomfortable, & miserable.

If you still have your heart set on going up be prepared for a 3 hour wait to the top.  Then once you get up there it will be miserably cold (I was freezing once in June) and not to mention it’s incredibly windy.  The odds of getting a glamorous photo at the top are zero.

Plus, once your on the Eiffel Tower you can’t see the Eiffel Tower and it really is one of the top things to see in Paris.  Instead, I recommend you enjoy the beautiful glory of the Eiffel Tower from the ground.  My opinion is the view from the Arc de Troimph is better, although lower but still a great height for a perfect view of Paris, including the Eiffel Tower.

Also let’s not forget the Sacre Coure which has a distant but beautiful view of the tower, if you’re willing to venture out a little farther.  The photo above shows the great view from the top.

SHOP AWAY FROM THE CHAMPS ELYSEES

Yeah, there are a lot of flagship stores there, and people might argue it’s one of the best shopping streets in Paris – there is some cool stuff, but I’m not convinced.  First timers absolutely have a walk down the Champs, it’s lovely and everyone should do it, but it’s incredibly chaotic, crowded, and you’ll need to watch out for scammers.

My advice is to look elsewhere, there are tons of other shopping options in Paris from luxury to affordable.  Some of my favorite places to shop, or just admire the goods, are the Place Vendome, along the Boulevard Saint Germain,  Rue De Rivoli, and the Galleries Lafayette, where you can shop under the stunning glass dome and sip champagne, as seen above.

Another fun affordable place to shop is the Monoprix stores all over Paris, I found this little gem with my Mom one year in Paris and I come back every time I’m in town.  It’s the equivalent of the Target stores in America, you can find everything, and it’s where we got all our supplies for our recent picnic.

DON’T JUST EAT MACARONS AT LAUDREE

Laudree has amazing macarons, but they have locations literally everywhere from London to New York.  I understand the appeal, I really do, I’ve visited many of the locations, especially on vacation in NYC.  They have gorgeous window displays and usually big crowds too.  Why not visit some of the smaller macaron shops?  The macarons will taste just as good if not better and give you more of a local Parisian feel.  Chances are you can just walk the streets and find some lovely places, but some of my favorites have been Aux Fontaine de Chocolates near Notre Dame and Christophe Roussel in Martparnise.

Also, FYI when referring to French macarons they are spelled with one “O” not two.  Macaroons refers to the American coconut blob cookie, it’s misspelled a lot so no harm if you’ve done it, although it drives me crazy.  I think I only get worked up because it’s my favorite dessert – like ever.  Spell it wrong if you must, just please enjoy every delicious bite.

DON’T BE A SLAVE TO LONG LINES

Nothing is worse than a long queue taking up all your free time.  Do your research on the busiest times, go right at opening when possible and when there are no other options buy skip the line tickets.  Skip the line tickets can be misleading, the only line your skipping is the ticket line, which can get very long at peak times.

There are many places you can do this at, the Louve is an example.  We bought our tickets online and breezed right by the long ticket line. Viator has many skip the line ticket options that vary, some are guided and some are not. You’ll still have another security line to go through, arriving early in the day will help with that.

About the Eiffel Tower again, there are many horror stories of those waiting hours to go up the Eiffel Tower, and they’re all true.  If I didn’t convince you and you still want to go to the top, there are a few tricks.   You can shorten the long wait by taking the stairs or going with a skip the line tour group – both of which still could have somewhat of a wait, it’s risky, and my favorite trick is having a reservation at 58 Tour Eiffel, the restaurant is on the first level and when you arrive at your reservation time you will go right up.  Although that will only get you up to the first level of the tower.  Let me stress you need a reservation here at Book a Table, or go through Viator.

TRY NOT TO CRAM IN TOO MANY ACTIVITIES

Have you ever tried to get the most out of a vacation and crammed in so many activities that you are left exhausted and miserable?  I’m raising my hand and totally guilty of this.  This can be hard, especially when you’re in an amazing place like Paris, it’s easy to get overwhelmed.  Although sometimes you can quickly breeze through activities, most of the time they take longer and you really need down time on a vacation.

Resist the urge to over schedule yourself, I have the best time on vacation, especially in Paris, when I just wander without a plan.  We just relax and sometimes find the best random things.  Set time aside to share a bottle of wine in the park and people watch, sit along the Seine and watch the sunset, watch the pigeons fight over a french fry.  This is what vacation is really about and you’ll feel like a local.

DON’T EAT ALL YOUR MEALS IN RESTAURANTS

Like the unplanned down time I mentioned above I think eating every meal in restaurants is also a no-no.  I love amazing restaurants as much as every other tourist, but sometimes you need to get out and eat like a local.  When the weather is nice there are so many places to picnic outdoors, and it’s something I’ve always craved to experience more.

Paris can be a little protective of their grass, so you can’t just picnic and sit anywhere, but their grass is beautiful, thick and green so I respect that.  There are still plenty of designated grassy areas to dine at, as well as park benches and chairs.  Some great spots to choose from are the grassy hills of the Sacre Coure, Champs de Mar, and many spots along the bank of the Seine.  Our most recent spot was the designated grassy area in the Jardin du Luxembourg, bistro chairs are also available under the shady trees.

RESEARCH ALL THE SCAMS

I hate to add this, it’s so negative, but please do yourself a favor and research every scam known to mankind before visiting Paris.  Don’t let this scare you or keep you at all from visiting though!  Once away from the heavy tourist areas I can almost guarantee you’ll be left alone, but near the attractions please watch out.

We’ve been approached by countless scammers and con artists.  From fake angry monks threatening to put a curse on you if you don’t donate, to the gold ring scam we recently got outside the Louvre.  And whatever you do please don’t let anyone weave a bracelet around your arm and don’t sign anything on paper – you’ll regret it!

Keeping your hands in your pockets if you have them is a wise idea near heavy touristy spots, I often get my hands and arms grabbed.  I’m all for charity and human kindness but please be aware, these scams and stories are very real and we’ve had many recently.  I’m painting the most negative picture here, it’s possible you could be entirely left alone, just keep walking and say a firm no.

RESEARCH TIMES, CLOSURE DATES, & EVENTS

I witnessed a group of heartbroken girls nearly in tears when they realized the Arc de Triomphe was completely closed due to the Tour de France. I felt really sad for them.  I’ve never seen the Arc so empty without cars or people, it was a crazy site to see.

Most museums are closed on Tuesdays, some are closed both Mondays and Tuesdays.  There’s nothing worse than having to replay your day last minute, so check everything!  Plan, plan, plan!

BE PREPARED FOR THE GREAT TOILET HUNT

Uh…  I’m just going to say it, Parisians are weird about people using their toilets.  Their free clean ones are guarded like the Queen of England.  I’ve never witnessed any other country or city being as secretive or weird about going potty..  I’m not sure if they’re germaphobes or if tourists have just abused their potty power but it takes real work to find a toilet in Paris.

Yeah, you can find creepy coin operated public street toilets every now and then, but it’s not always that easy.  Many restaurants in popular tourist spots have them not only hidden underground but you must go through several levels of screening from the hostess to several waiters giving you the stink eye.

Your best bet is to give in and order a drink or a meal to go potty, and you’ll still probably need to go again 5 minutes after leaving.  You have a better chance of winning the lottery than sneaking in to use the toilet.  You have a few options like the one hour line at the McDonalds – places like Starbucks usually have a key coded lock, or plan on keeping change on you at all times to go potty.  Prices vary with the priciest toilet I’ve sen being 3 Euro, along the Champs Elyees.  Dehydrating yourself maybe the easiest option.

I hope these tips help you on planning a trip to Paris.  During this trip we stayed at the Renaissance Paris Vendome and it was incredible!  We really took it easy on this trip, those looking to explore more of Paris and are a little unsure check out some of the great Viator tours available, I have great things to say about every one we’ve done in Paris, from Moulin Rougue, to a dinner cruise along the Seine, all wonderful!  If you visit Versailles I recommend you spend a full day there, not just a half, be sure to eat at La Petite Venise.

A DAY TRIP TO BRIGHTON, ENGLAND

I’m back up and running now – although a bit slowly – so let’s talk about Brighton!  I have a ton of vacation posts to write but I felt the urge to start with Brighton, I guess because it makes me think of the beachy summer and I feel summer slipping away quickly!  I would describe Brighton as a cheery, vibrant beach town, it’s weathered, it’s quirky, and most of all it’s fun!

My human functioning level is slowly getting back to normal, I think I’m at 70% now, but considering I came home from vacation at 4% I think I’m doing pretty good.  I did manage to get out of my bathrobe and put workout clothes on yesterday,  I’m not sure if workout clothes count as putting on real clothes though… hmmm.

Our trip to Brighton was spontaneous.  We were looking for some day trips to mix up our time in London and I kept wanting to experience a beach in England.  It was an easy train ride from London, about an hour I’d say, with trains leaving often.  Once we stepped out of the train station we spent the entire day walking the area by foot.  We first stopped at the Royal Pavilion.  The Royal Pavilion was built in 1787 for George, Prince of Wales.  The architecture inside and out really is stunning, my favorite was the dragon chandelier.  No indoor photographs are allowed but I did find some interior photos here and you can read a little more about the history too.

After spending time at the pavilion we walked over to Veeno for a glass of wine and then stopped at The Coal Shed for lunch.  Reservations are recommended for this place, the food is truly awesome!

After lunch we took a short walk towards to the beach.  I must say pebble beaches are really starting to grow on me.  It feels awesome leaving a beach without sand stuck all over you, I hate sand.

We walked down to the beach and the sun and salty breeze felt so good that we ended up taking a little nap.  It was awesome and peaceful listening to the seagulls and the waves crash.  We pretty much looked like that couple below all spread out on the pebbles, surprisingly it was not that uncomfortable chillin on a bunch of tiny rocks.

After our nap we walked along the beach towards the pier, here you’ll find lots of fun stuff like ice cream, a carousel, and the Brighton Afloat Sculpture.

The Afloat sculpture is basically a giant graffiti covered donut along the sea, hey… remember I mentioned Brighton as being weathered and quirky??  It’s definitely a fun sculpture to take photos of, even though the sun and the other tourists didn’t cooperate with us.  Lots of people like to fish in this area too.

Brighton Palace Pier is a really fun place to hang out and soak up some salty sea air.  A lot of Brighton Beach reminded me of Galveston.  On the Pier you’ll find a few places to eat, games, rides, and chairs to relax and take in the view.

We ended up at Victoria’s Bar, in the Palm Court, on the pier with gorgeous views of the ocean.  We relaxed here quite a while and ordered dessert.  This was one of the yummiest desserts I’ve ever eaten.  How could I say no to a gluten-ree brownie sundae with caramel popcorn?  It was awesome!  I refused to share, Brian had to order his own.

After stopping at some beach souvineer shops across from the beach we walked back to the train station.  We were here mid-week so it wasn’t that crowded.  Brighton is an easy train ride from London and makes a great day trip for those who live in the area or those just on vacation in the area.

THE EUROPE DIARIES VOL. 4

Home sweet home.  I had such an amazing trip with Brian, I saw the most beautiful things.  I had fun, I had adventure, I laughed and I cried, having said that I’m now so happy it’s over!  We arrived home late Thursday night, it was such a long day, we flew home from Scotland, switching planes in London, and when you count the flight times, layovers at the airport, and with the time change we were awake nearly 24 hours.  The truth is I’ve been exhausted for weeks, I used to laugh when I would read about celebrities checking into hospitals for exhaustion.  No.. I totally get it now.   For the last few weeks I’ve been not sleeping well, and I’ve been on and off sick.  I’d get a little better, than a worse again, and I just went back and forth with that the last several weeks.

It’s weird being back after 6 weeks.  Things feel really different… I mean I went 6 weeks without driving a car or cooking a meal for my family… that’s kinda weird.  Several people commented 6 weeks is a long time… yeah I know.  I mean planning I thought it wasn’t a big deal but yeah I agree with everyone who said 6 weeks was too long!  Living out of a suitcase with the same clothes, going and going everyday was intense.  All complaining aside we did have and incredible time and I’m very grateful for the experience.

I wanted to update the blog sooner but I have been so tired.  The main reason of today’s blog post is just to let everyone know that the trip has wrapped up and I’m home safe.  I have so many amazing travel stories and photos I want to share soon, that is when I feel recovered and have my energy back.  I also want to get back into the swing of other blog topics.   All of these photos are from Scotland by the way, it was gorgeous!

I did have a moment in Scotland where I decided to delete my social media – I just snapped.  Rather than just enjoying my vacation I was obsessing on getting a damn Instagram photo and I decided enough was enough.  It was starting to ruin my trip.  It’s been engrained into my head that to have a successful blog you must have a rocking Instagram, but honestly I can’t deal with that pressure right now.  I felt so much relief that I deleted Facebook and Twitter too, I plan on writing more on this topic soon.  I still have my Pinterest, I love Pinterest!

We’re trying to unpack and get ready for school starting next week, the house looks crazy!  The weekend before school starts we always finish up our shopping and have a back to school party and watch Ferris Bueller and Billy Madison, so I’m excited for that.  I’m also excited for Fall, even though I’m tired I feel my “Fall” self kicking in.  For me it’s an intense urge to cook, bake, and start home projects.  I love the transition of our home from Summer to Fall.

I’ll be back next week as soon as I feel better and share more posts on our trip… I’m going to try and space them out farther apart though so hopefully you won’t get bored.
